Casserole Brinjal Gravy/Eggplant Family/Almagro Eggplant-Weekend Recipe...Happy Weekend..))))))))))))))

Hello Friends!!!!!!!!!!!!

The recipe which we are going to see is very simple and you all will love it.

Brinjal/eggplant family is one vegetable variety which we commonly use in India for gravy,dhal or Sambhar etc.

It is a very tasty vegetable and it has many values like,

* It is really good for heart and helps for cholesterol reducing.

*It has lots of vitamins and potassium too.

*They prevent tumor growth cells in our body and also growth of cancer cells.

*It helps to reduce weight if taken in a correct ratio and correct method.

There are many benefits and you can google on the same.

I made this recipe in casserole and i am lover of casserole.I love to buy different sizes of casserole and have a good collection on them,

This gravy goes complimentary with chapathi,roti,steamed basmati rice,pulao etc.

So now let's see how to make this one.

Serving                          :      4 People

Cooking Time               ;      20 Mins

Ingredients:

1.)Oil                             - 2 and a half  Teaspoons (Normal Big spoon)(Ref my measurements post)

2.)Mustard Seeds          - 1 Spoon(Normal Big spoon)(Ref my measurements post)

3.)Onions                      -1 Cup Chopped(Ref my measurements post)

4.)Tomatoes                 -1 Cup(Ref my measurements post)

5.)Salt                          -As required

6.)Sambhar Powder/   -2 and a half spoons(Normal Big spoon)(Ref my measurements post)
    Curry Powder

7.)Water                     -As required

8.)Curry leaves          -2 archs

9.)Asafoetida            -2 Pinches

10.)Brinjals              -As required(Here i have used half a kilo)



Method:

1.)Wash the brinjals in running water and wipe them with a dried cloth.


2.)Take each brinjal and cut as shown below.Please do not cut it fully as it will go into pieces and become very very soggy.





3.)Now heat a casserole and add oil and saute the mustard seeds and wait until they fully pop up.


4.)After the mustard seeds have popped up, add the chopped onions and fry till golden brown. 


5.)Now add the chopped tomatoes to this and fry them.


6.)After the onions and tomatoes are cooked,add asafoetida as said.


7.)Now mix them well and add the sambhar powder/curry powder as said and also add salt to this mixture.




For Sambhar powder, kindly refer my post below.This is the powder i used.


8.)Now mix the whole thing as shown below.



9.)Now add water and make this mixture to a gravy consistency. The consistency and amount of water you add should be enough for the brinjals to immerse fully. Add enough water because if your brinjals does not immerse fully, you will not get the exact taste. 





10.)Now add the required curry leaves to the gravy.




11.)Now close the casserole with the lid and wait for the aroma to come.


12.)After good aroma comes with all the masala smell gone,open the lid to check whether the dish has been done or not.

13.)Hot brinjal gravy is ready to serve!!!!!!!!!!!



Enjoy with any supporting Dish of your choice.....

This is really very easy and different with our usual kitchen ingredients for guests at home or even if you are bored of eating something regular in brinjal. 

Note:

1.)Do not open the casserole often to check .This is applicable for general casserole cooking because too much of water may be left in the dish.

2.)Mostly try to use only this brinjal as it will give very good taste.

3.)You can use gingelly oil instead of normal oil to give a better taste.

4.)If you want it more spicier,do not add sambhar powder/curry powder further to the said quantity.Instead add green chillies to it. Remember already this sambhar powder consists of red chillies. Again refer to my
