Mushroom Pulao with Brocolli Soup---Weekend Special"Happy Weekend Folks'--- Healthy Recipe-Non Stick Pressure Pan Made

Hi Everyone!

Mushrooms and Brocolli are my two favourite ingredients in any type of cuisine.I love mushrooms and enjoy the flavour of broccoli in any dish. My husband also loves the same and he loves mushrooms a lot ! So I thought why not prepare something with these two as to have a better start for the weekend!!!!

Brocolli is very good for health and it has lots of important values.Recently I read an article in Times of India about Brocolli.It is very good for Cancer,Cholesterol,reduction,reduces allergic and inflammation reactions,powerful antioxidant,bone health,good for heart and a rich source of fiber.

So now you would have got an idea of what we are going to cook and how healthy it is!!!!!!!

SERVING             :        2 people

COOKING TIME:      15 Mins

INGREDIENTS:

FOR THE MUSHROOM PULAO:

1.) Mushrooms                 - I used one packet of button mushrooms.

2.)Onions                         - Big ones,chopped,1 soup bowl(Ref my measurements post)

3.)Star Anise                   - 2 Pieces

4.)Bay leaf                      - 2 Nos

5.)Beacon                       - 3 pieces

6.)Green Chillies           - As per your spice requirement

7.)Salt                           - As per your requirement

8.)Olive Oil                 - As required

9.)Coriander Leaves   - 1 cup chopped (Ref my measurements post)

10.)Milk                     - 1 cup milk(Ref my measurements post)

11.)Fresh Curd          - 2 spoons(Normal big spoon)(Ref my measurements post)

12.)Basmati Rice      - 1 Cup

 


Method:

1.)Clean the button mushrooms and cut them into two half pieces and keep them ready.

2.)Now heat the pressure pan and saute olive oil in it.Put the star anise,beacon and bay leaf and saute
    them again till light brown.


3.)Now add the chopped onions and fry them till golden brown and add green chillies to it.

Note:Green chillies can be added according to your spice requirement.Because this is the only 
         source of spice in this dish. So add them more if you want the pulao more spicy.



4.)Now add the chopped button mushrooms to this.


5.)Add the coriander leaves now .


6.)Now add the milk in the said quantity and allow this mixture to boil for 5 mins in milk itself.
    When the milk part starts to get thicker , you can be ready to add the next ingredient.


7.)Now after 5 mins, the milk will get thicker as such.



8.)Add the soaked basmati rice to this mixture.

NOTE:CLEAN AND SOAK THE BASMATI RICE BEFORE COOKING FOR 20 MINS.


9.)Add the fresh curd now in the said quantity.


10.)Finally add the required salt and water for the whole dish and pressure cook it for just 2 whistles
      only.

NOTE:CHECK THE WATER MEASUREMENT AND THEN POUR BECAUSE YOU HAVE ALREADY BOILED THE SAME IN MILK FOR 5 MINS AND SOAKED THE RICE FOR 20 MINS.SINCE I AM USING A NON STICK PAN I JUST POURED ONLY 1 CUP WATER.FOR CUP MEASUREMENT,PLS REFER MY MEASUREMENTS POST.

11.)Now Mushroom Pulao is hot and ready to serve!!!!!!!!!!!!!!!


Serve the mushroom pulao with any Raita of your choice.Onion and carrot raitha will compliment
excellently.Enjoy!!!!!!!!!!!






BROCOLLI SOUP

Now we are going to see how to make brocolli soup. 

Serving                  :   2 people

Cooking Time      : 10 Mins

Ingredients:

1.)Brocolli             - One small brocolli

2.)Onions              - 1 Big onion,chopped

3.)Garlic               - 5 Nos

4.)Milk                 - According to the consistency

5.)Salt                  -As per your requirement

Method:

1.)Wash and cut the brocolli into pieces. Cut them seperately into each flower.And keep them ready.

2.)Cut the onions and garlic and saute them in olive oil. 



3.)Now add the brocolli flowers to this and add some water and boil them by adding salt also. 

NOTE:DO NOT OVER COOK BROCOLLI AS IT MAY TURN DARK AND GIVE A VERY
BAD TASTE . IT WILL GET COOKED EASILY SO KEEP CHECKING IT. IF YOU HAVE
NOT COOKED A BROCOLLI WELL, IT WILL BE SHOWN IN THE TASTE.IT WILL 
TURN SOUR.


4.)Now add the whole mixture in a churner and grind it into a smooth paste. 



5.)Add the required milk to make a soup consistency.

6.)Now hot brocolli soup is ready!!!!!!!!!!!!!!!!!!!




Now Hot Mushroom Pulao and Brocolli Soup is ready!!!!!!!!!!!!!!!!!!!!!

Note:

1.)For the brocolli soup, you can add fresh cream to get a rich taste but i used only toned low fat 
    milk.

2.)Do not overcook brocolli.

3.)Mushrooms may catch salt quicker so add salt carefully. Always less salt for mushrooms is advisable.
