Cutlet is one of my favourite snacks and generally cutlet refers to filling of meat in foreign countries but here in Indian population, the majority lies with vegetables only.

The best cutlet i tasted is the Ashram Cutlet(Sri Aurobindo Ashram),Pondicherry.They serve very hygenic food and their cutlet is served with dates and honey sauce which will always be mouth watering. So when you drop in Pondicherry,do try it!!!!!!!!!!!!!!
Now let's see how to make simple veg cutlet.
Serving : 6 People(Each plate 2 cutlets)
Preparation Time : 25 Mins
Ingredients:
1.)Potatoes - 4 nos big ones
2.)Beans - 1 cup-chopped ones(Refer my measurements post)
3.)Carrot - 1 cup-chopped ones(Refer my measurements post)
4.)Beetroot - 1 cup-chopped ones(Refer my measurements post)
5.)Salt - As required
6.)Garam Masala - 1 and a half teaspoon(normal big spoon)(Refer my measurements post)
7.)Cumin Powder - 1 teaspoon(normal big spoon)(Refer my measurements post)
8.)Dry Mango/ - Half a teaspoon(Normal spoon size)(Refer my measurements post)
Amchur Powder
9.)Chaat Masala - A pinch
10.)Chilli Powder - As required
11.)Bread Crumbs - 1 soup bowl (Refer my measurements post)
12.)Cornflour - As required
13.)Rice Flour - As required
14.)Besan Flour - As required
15.)Oil -As required for frying the cutlets.
Note:How much ever cutlets you make, take No.12,13 and 14 accordingly. Importantly, take in equal measurements only. Here i used 3 teaspoons(normal big spoon-(Refer my measurements post)each for 12 cutlets to make the batter.
Method:
1.)Boil the potatoes and mash them.
2.)Now chop the other vegetables as said and clean them .
3.)Now heat a pan and saute little oil and fry the chop vegetables.Add all the masala powder(No.5,6,7,8,9,and 10) to these vegetables and fry them until they are cooked.Do not
add more oil to it.It should not be oily and not too dry also.It should be as below.
4.)Now add these vegetables in the mashed potatoes and mix them well.
And finally after mixing the stuffing well, again just give a rough mash on it to get eveness.
5.)Now make this stuffing into small round cutlets and keep it aside.
6.)Now we can prepare the batter.Take equal measurements of the ingredients No.12,13 & 14 and add required water to make a batter.It should not be very thin or very thick.It should be in a consistency like where an ice cream starts melting. You can also refer my Note mentioned above for the measurements i have taken. And no lumps should be there. If you want you can use a blender too.
7.)Now dip the cutlets in this batter and finally dip it again in the bread crumb and fry them.
Note:Dip the cutlets on both front and back sides + roll the cutlet on all sides in the batter and bread crumb to get even blending.
8.)Now serve the cutlets with sauce of your choice.
Note:
1.)Do not prepare the cutlets stuffing and keep it for along time and fry as they would absorb lot of oil while frying.Make them freshly .
2.)First fry one cutlet and check whether it is coming perfectly or there must be some thing less in the batter you have prepared.So check it again.
